I need a clarification, cause I need to activate an alert linked to a task that I would like to send an email to the assignees, I would like to know what happens in cases where the assignees are anyone.
As far as I know it is not possible to use the alert for specific projects

Setting Anyone to have access to tasks refers to who will be able to track time on those tasks. However, when you are setting up the alert you can choose who will receive the email, and if you choose Tasks assigned all the tasks assigned will receive the email.
Also, you are correct, it is not possible to set up an alert for a specific project, however, note that alerts apply to projects that have estimates.
